Traditional Chicken a La King

Creamy and hearty CHICKEN A LA KING is the comfort food staple you’ll crave for on those cold winter nights.
This tasty dish is a firm South African favourite which basically consists of red and yellow peppers, mushrooms and chicken, of course. All of these are married together with a thick and flavourful delicious creamy sauce.
 
Chicken – Diced Chicken Breasts that have been steamed until soft with salt, garlic and chilli flakes
Butter – I used unsalted to control the sodium content!
Mushrooms – Mushrooms are a staple in chicken a la king! I used white mushrooms, cleaned and sliced.
Onion – I used white onion
Chicken Stock – For extra flavour. Try to ensure that it’s a low sodium brand.
Corn Flour – To help thicken up the sauce.
Milk – Use your preference! I’ve used full fat milk, but any dairy or non dairy alternative will work.
Peas – I used frozen peas to save time
Red and Yellow Peppers - Cubed
Cream -Just a splash

Ingredients
  

  • 600 Gr Diced Cooked Chicken Breasts See Note
  • 3 Tbles Butter
  • 1 Onion Finely Chopped
  • 250 Gr White Mushrooms Sliced
  • 3 Tbles Corn Flour
  • 2 Cups Warm Milk
  • 1 Cup Chicken Stock
  • 1 Red Pepper Diced into Cubes
  • 1 Yellow Pepper Diced into Cubes
  • Salt and Freshly Ground Pepper to Taste
  • 1 Cup Frozen Green Peas
  • Splash of Cream Optional

Instructions
 

  • In a pan on a medium heat, add butter and cook the onions until soft and translucent.
  • Add sliced mushrooms and braise for about 5 mins.
  • Add the corn flour and cook for a minute or two stirring constantly.
  • Remove from the heat, add the warm milk and stock which have been mixed together slowly and stir constantly to ensure that there are no lumps.  Bring to the boil and stir until smooth and creamy. About 5 minutes
  • Taste the sauce for seasoning then add the chicken and the cubed peppers and cook for a further 10 mins or until just cooked through.
  • Lastly add the frozen peas and simmer for about 5minutes so that the peas remain green.
  • Stir through cream if using and serve hot.
  • Serve with pasta or fluffy white rice and a side salad.

Notes

Steam the chicken cubes until tender but not dry with 1 teaspoon of garlic paste,1 teaspoon of red chilli flakes and a touch of salt.
