Rainbow Salad with Citrus Dressing

This salad is a real crowd pleaser! It is vibrant, healthy, and so colourful!
This summer Rainbow Salad is so versatile, and it’s the perfect side dish to serve alongside any of your favourite meals. Add some protein and it will fill you up for hours.
All of the salad components pair beautifully together and the tangy citrus dressing adds a light delicious flavour that brings the whole salad together.
Every bite of this refreshing salad will have you wanting more. You could also serve this rainbow salad as a side salad to accompany a simple main course like these spicychicken wings.
How To Make Rainbow Salad With Citrus Dressing
Combine the salad: To a large serving  platter arrange the corn kernels, black olives, baby tomatoes, diced cucumber, diced feta, and chopped avocado alongside each other.
Create your simple citrus dressing: Squeeze the orange juice an orange and the lime juice from 2 limes, each should be about ¼ cup or so, then add the olive oil, and honey and season with salt and pepper.  Add all the dressing  ingredients to a jar with a tight-fitting lid and shake vigorously until well blended. Drizzle over the salad and garnish with some freshly chopped chives.

Ingredients
  

  • 2 Cups Corn Kernels (Fresh, Frozen or Canned)
  • 2 Cups Black Olives
  • 2 Cups Baby Tomatoes (Halved)
  • 2 Cups Cucumber (Diced)
  • 2 Cups Avocado (Peeled, Seeded and Diced)
  • Chives (For Garnishing)

Citrus Dressing

  • 1/4 Cup Freshly Squeezed Orange Juice
  • 1/4 Cup Fresh Lime Juice
  • 1 Tbles Dijon Mustard
  • 1/4 Cup Olive Oil
  • 2 Tbles Honey
  • Salt and Freshly Ground Pepper

Instructions
 

  • Arrange salad ingredients in sections on a large serving platter.
  • Add all the dressing ingredients to a jar with a tight-fitting lid and shake vigorously until well blended.
  • Drizzle the salad with the citrus dressing and garnish with chopped chives.
  • Serve immediately!
