This One Pan Indian Masala Omelette bursting with Indian flavours is great option for a protein rich breakfast, lunch or dinner. Spices and Eggs have a natural affinity and together with sautéed onions, tomato, green chilli and coriander it works so well together. Loaded with fresh vegetables, it is lightly seasoned with garam masala and turmeric powder. Served with some crusty bread and a salad this spiced Indian Omelette can be served anytime of the day for a nutritious and protein-rich meal! What is a Spicy Masala Omelette?In essence it’s beaten eggs elevated with Indian spices and cooked in ghee. In our home it is much preferred it to a plain omelette.It is also hugely versatile and you can add whatever vegetables and herbs that you have on hand.If you love to eat cheesy omelettes ,sprinkle some grated cheese on top and cook until it melts. Steps to make this Masala OmeletteMake sure onions, tomatoes and other ingredients are diced small so that the omelette doesn’t break while flipping.Lightly whisk the eggs with a little salt in a bowl.Add the onion, tomato, chilli, coriander and turmeric to the eggs and mix.Slightly warm the oil in a skillet and pour the eggs in. Cook on low heat to get that beautiful golden and thick omelette. Be patient and flip the omelette too early, or it might break. Once the eggs are almost cooked through, flip it over and finish on other side.It is recommended to use a good non-stick pan to ensure that the mixture does not stick to the pan. Ingredients Needed to make this OmeletteEggs – I usually use free range large brown eggs, but you can use white eggs too, if you prefer those.Spices – I prefer the blend of spices shown above, but you can alter the spices based on your preference.Vegetables – I used onions, tomatoes green chillies and coriander, because that’s usually what I always have on hand but you can adjust the quantity and variety of vegetables based on your preference. The chillies and chopped coriander leaves, gives the omelette a spicy kick, while also offering a refreshing contrast to the richness of the eggs. They can be adjusted according to your heat preferenceGhee – Butter is what makes our omelette irresistibly rich and tasty. Feel free to adjust the quantity of butter based on your preference, but I recommend not going too low on it, because it helps the omelette get fluffy.Cheese –This omelette can most definitely be made without any cheese but if you do decide to add some cheese just add a light sprinkling of grated cheese over the top–it truly elevates the taste!
Ingredients
- 4 Lrg Eggs
- 2 Tbles Ghee Divided
- 4 Tbles Onion Finely Chopped
- 3 Tbles Tomato Finely Chopped
- 2 Green Chillies Finely Chopped
- 1 Tsp Garlic Paste
- 2 Tbles Coriander Finely Chopped
- 1 Tsp Garam Masala
- 1/4 Tsp Turmeric
- 1/2 Tsp Red Chilli Flakes Optional
- Salt To Taste
Garnish
- Handful of Roasted Baby Tomatoes
- Handful of Baby Spinach
Instructions
- Crack the eggs in a medium-sized mixing bowl. Whisk them well using a whisk or a fork. Set aside.
- Heat 1 tablespoon of ghee in a medium sized pan over medium heat.
- Add onions, tomatoes and chopped green chilli and garlic paste and sauté for 5 minutes till they are soft and translucent.
- Remove from the pan and add the sautéed onions, tomatoes, chillies and garlic paste mix together with the chopped coriander, garam masala, turmeric powder, chilli flakes if using and salt to the eggs and mix well.
- Heat the same pan over medium heat.
- Add the rest of the ghee to the pan and swirl the pan to coat it all over with ghee.
- Turn the heat down low and add the egg mixture slowly to the pan. Swirl the pan to spread the mixture evenly.
- Let this cook for 5-6 minutes on a low heat undisturbed.
- Cover the omelette with a lid until the center is just set (about 5 minutes).
- Remove from the heat and slide onto a plate and garnish with roasted baby tomatoes and fresh baby spinach.
- Serve Hot.

If there are any leftovers it stores well in the fridge, so save some for breakfast or lunch the next day!
