As a rule muffins are such fun to make! These muffins with classic pizza fillings look and smell just like the real thing. The whole family will love these pizza muffins and they make perfect lunchboxes fillers or to feed hungry kids after school. This recipe is super simple to make ,even the kids will love making them!Simply add the wet ingredients to the dry, gently combine with two eggs lightly beaten and you have yourself 12 delicious decent sized muffins. Do Savory Muffins Need to be Refrigerated?As a rule of thumb, most muffins do not need to be refrigerated. However, these savoury muffins are an exception, as they are made with perishable ingredients such as chicken and cheese.We recommend placing the muffins in a sealed, airtight container or food storage bag. They will stay good in the fridge for up to 3-4 days.You can also freeze these delicious pizza muffins for up to a month. Individually wrap each muffin in plastic cling wrap, then place them all in a larger freezer storage bag.Whether you refrigerate or freeze ,always make sure the muffins are completely cooled to room temperature before placing in any sealed container. If the muffins are still warm, steam will be trapped in the bag or container and could make the muffins soggy.
Ingredients
- 1 Cup Chicken Breast Fillets Cooked and Cubed
- 1/2 Cup Mozzarella Cheese Grated
- 1/2 Cup Mature Cheddar Cheese Grated
- 1 Tsp Garlic Powder
- 1 Tsp Italian Seasoning
- 1/4 Cup Green Pepper Finely Cubed
- 1/4 Cup Red Pepper Finely Cubed
- 1/2 Cup Fresh Basil Sliced
- 1/2 Cup Spring Onions Finely Sliced
- 2 X-Large Eggs Lightly Beaten
- 1/2 Cup Self Raising Flour
- 4 Tbles Mayonnaise
- 4 Tbles Tomato Sauce
- Salt and Freshly Ground Pepper To Taste
Instructions
- Preheat oven to 180°C
- Mix all ingredients lightly in a large dish.
- Do not over-mix as mixture should be slightly lumpy.
- Place about a heaped tablespoon in greased muffin pans and bake for 20-25 mins
