Cauliflower Bake

Loaded Cauliflower Bake is steamed cauliflower combined with cream cheese, sour cream, cheddar cheese, mozzarella cheese and chives. Cauliflower has never tasted this good!

This delicious casserole makes an excellent meal on its own or as a side dish, it’s very low in carbs and its so easy to make.

How to Make Cauliflower Bake

Start by steaming your cauliflower until just tender. Then drain well because you don’t want any added moisture in this dish. In the same pot that the cauliflower was steamed in over a medium low heat, mix together the cream cheese, sour cream, cheddar cheese, mozzarella cheese, garlic powder and onion powder until smooth and creamy.  Slowly and gently stir in the steamed cauliflower, chives and salt and freshly ground pepper to taste. 

Spoon into a casserole dish and top with more cheese. Bake until the cheese is melted and gooey.  Garnish with chives and serve hot.

The Ingredients for the Cauliflower Bake are Quite Simple and Readily Available in South Africa.

 Cauliflower

Cream Cheese

Sour Cream

Mozzarella Cheese, Grated

Cheddar Cheese, Grated

Garlic Powder

Onion Powder

Salt and Freshly Ground Pepper to Taste

½ Cup Cheese for Topping (I use an equal mix of Cheddar and Mozzarella)

Fresh Chives

  • 1 Large Cauliflower (Cut In Bite Size Pieces (Approx 1 Kg))
  • 230 Gr Cream Cheese
  • 1/2 Cup Sour Cream
  • 1/2 Cup Sharp Cheddar (Grated)
  • 1/2 Cup Mozarella (Cheese Grated)
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1/4 Cup Fresh Chives (Reserve 1 Tbles for the Top)
  • Salt & Freshly Ground Pepper (To Taste)
  • 1/2 Cup Cheese (For Topping)
  1. Preheat oven to180 °C.

  2. Spray a baking or casserole dish with cooking spray.

  3. Start by steaming your cauliflower in a large pot until just tender or no longer than 10minutes. Then drain well in a colander because you don’t want any added moisture in this dish.

  4. In the same pot that the cauliflower was steamed in over a medium low heat, mix together the cream cheese, sour cream, cheddar cheese, mozzarella cheese, garlic powder and onion powder until smooth and creamy. This should take no longer than 5 minutes.

  5. Slowly and gently stir in the steamed cauliflower, chives and salt and freshly ground pepper to taste.

  6. Spoon into casserole dish and top with remaining cheese.

  7. Bake uncovered for 15-20 minutes or until the cheese is melted.

  8. Top with remaining chives and serve hot.
