Spaghetti Bolognese
There are plenty of Spaghetti Bolognese recipes around, but a classic Bolognese sauce has to be a deep red colour with a rich tasty tomato sauce which is loaded with flavour. This simple Bolognese recipe with a hint of Worcestershire sauce creates an explosion of flavour and one can quickly whip up a hearty midweek meal!How To Make Spaghetti BologneseHeat the olive oil in a large pan over medium heat. Add the onions and sauté until lightly golden, 2 to 3 minutes. Add the garlic and fry another minute.Add the ground beefFry until fully cooked and no pink shows at all in the meat. Add the celery stalks and the mushrooms if usingBrown the meat well. This adds a ton of flavour.Then add the crushed tomatoes, tomato paste, brown sugar, the stock, worcester sauce, mixed dried herbs, paprika and salt and freshly ground pepper to taste.Simmer gently for about 20 minutes. Serve with freshly cooked spaghetti.
Ingredients
- 500 Gr Lean Ground Beef
- 3 Tbles Olive Oil
- 1 Large Onion Finely Chopped
- 4 Cloves Garlic Finely Chopped
- 2 Celery Stalks Chopped
- 250 Gr Mushrooms Sliced (Optional)
- 410 Gr Can Crushed Tomatoes
- 50 Gr Tomato Paste
- 2 Tsps Brown Sugar See Note
- 1 Cup Beef or Veggie Stock
- 1 Tbles Worcestershire Sauce
- 1 Tsp Mixed Dried Herbs
- 1/2 Tsp Paprika
- Salt and Freshly Ground Pepper To Taste
To Serve
- 350 Gr Spaghetti Dried
- Freshly Grated Parmesan Cheese
- Parsley or Basil Chopped
Instructions
- Add ground mince and braise until well browned.
- Add the chopped celery, mushrooms if using, chopped tomatoes, tomato paste, brown sugar, the stock, Worcestershire sauce, mixed herbs, paprika, salt and freshly ground pepper.
- Simmer covered, stirring occasionally for approx. 30 mins until the meat is tender and the sauce has thickened, stirring occasionally.
- Cook the spaghetti according to the packet instructions, drain and toss in a little olive oil, to prevent it from sticking together.
- Add the spaghetti to the pot and toss well with the sauce. Garnish with grated Parmesan and fresh parsley or basil. Serve immediately.
Notes
Crushed Tomato–Certain brands of canned tomato can be quite sour. Adding some brown sugar can make an incredible difference. The amount required will depend on your taste. I normally add one or two teaspoons of brown sugar.
Bolognese gets better the longer it is cooked, and it’s even better the next day!
