Coconut Filled Pancakes

Pancakes, as they are called in South Africa are the perfect base for all your favourite fillings like Cinnamon Sugar, Nutella with Chopped Strawberries, Chocolate Sauce or Maple Syrup. The possibilities are endless and thoroughly delicious! These pancakes are perfectly thin and tender, deliciously buttery and cooked till it's lightly golden brown and filled with a yummy moist coconut filling.

How To Make Coconut Filled Pancakes

Blitz everything besides the baking powder together. If you don’t have a blender, you can whisk this by hand in a bowl.

Let the mixture rest for about 30 mins and add the baking powder just before cooking the pancakes.

Heat a medium sized shallow frying pan on medium-low heat. Once it is warm, brush it with butter.

Pour a thin layer of batter into the pan, tilting it to distribute batter evenly.

Cook the pancake for a minute or two, until the bottom is golden and some small air bubbles pop up on the surface. Flip the pancake and let the other side cook for another minute or two.

Repeat this process with the remaining batter.

While the pancake mixture is resting, make the coconut filling.

Fill the middle of the length of pancake with some coconut mixture and then roll up.

You can also fold the pancakes into fourths as you finish cooking them and serve warm with powdered sugar and a sprinkle of lemon juice and fresh berries.

  • Blender or Whisk
  • 2 Cups Cake Flour
  • 2 Large Eggs
  • 21/2 Cups Water
  • 1/4 Cup Oil
  • 2 Tsps Baking Powder

Coconut Filling

  • 1 Cup Desiccated Coconut
  • 1/2 Cup Sugar
  • 1/2 Cup Water
  • 2 Cinnamon Sticks
  • 2 Cardamom Pods
  • 1 Tsp Butter
  1. Blitz everything besides the baking powder together. Let the mixture rest for about 30 mins and add the baking powder just before cooking the pancakes.

  2. Pour a thin layer of batter into a heated, lightly greased pan, tilting it to distribute batter evenly.

  3. Fry on one side until browned, turn over and brown on the other side.

  4. Fill the middle of the pancake with some coconut mixture,depending on the size of your pancake and then roll up.

Coconut Filling

  1. Simmer all the ingredients besides the butter over medium heat for about 10 mins.

  2. If the mixture appears too dry add a bit more water.

  3. Stir through the butter, remove the cinnamon sticks and cardamom pods and cool before filling the pancakes.

While the pancake mixture is resting, make the coconut filling.
