Chicken and Vegetable Spring Rolls
Packed with chicken, carrots, corn and peppers these chicken and vegetable spring rolls are crispy, crunchy and absolutely delicious! These homemade chicken and veg spring rolls are nothing like the ones at take outs with mushy fillings and extremely greasy pastry. These delicately spiced, spring rolls are light and full of flavour. They are also healthier as they have been baked in an air fryer which results in fantastically crispy and especially tasty rolls that come out perfectly every time! An absolutely delicious appetizer to serve your guests at your next party!Ingredients Needed to Make Chicken Spring Rolls Ground Chicken Mince — I used chicken but you can swap it for so many other meats.Vegetables —Carrot, Corn, Red Peppers and Onions are my favourites here. Flavouring —Ginger & Garlic Paste, Green Chilli Paste Garlic adds a great of flavour.Spices—Chilli Powder, Ground Coriander. Ground Cumin, Turmeric Powder and SaltSpring Roll Wrappers —Frozen spring roll wrappers are available at most Asian or Indian Stores.It can also be found most supermarkets here in South Africa!(I used 18cm x 16cm Spring Roll Wrappers) How to Store and Freeze Spring RollsThese also freeze very well. Put the uncooked rolls on a baking sheet, cover with foil, and place in the freezer for 4-5 hours or until they’re frozen solid. Once they are frozen, place them together in a freezer bag and keep them in the freezer for up to 3 months. Allow to thaw completely at room temperature, brush them with oil, and cook them as if they were freshly prepared spring rolls.Tips for Making the Best Air Fryer Spring Rolls Don’t overfill them.Always preheat the air fryer for this recipe.To ensure crispy spring rolls always brush lightly with oil.
Ingredients
- 1 Kg Boneless Chicken Breasts Coarsely Ground
- 2 Tsps Ginger & Garlic Paste
- 2 Tsps Green Chilli Paste
- 1 Tsp Chilli Powder
- 1 Tsp Ground Coriander
- 1 Tsp Ground Cumin
- 1/2 Tsp Turmeric Powder
- Salt To Taste
- 2 Large Onions Chopped
- 11/2 Cups Carrots Coarsely Grated
- 1/12 Cups Corn
- 1 Cups Mixed Colour Peppers Finely Cubed
- 4 Tbles Mayonnaise Optional
- Handful of Chopped Coriander
- 50 Spring Roll Wrappers
Paste
- 4 Tbles Flour
- 4 Tbles Water
Instructions
- Combine the chicken, ginger and garlic paste together in a bowl.
- Add the spices and the salt and mix well to ensure an even distribution of the spices.
- Heat oil in a pan and add the chicken and stir vigorously to ensure that the chicken cooks evenly and is fairly dry.
- Squeeze out the excess moisture from the onions by placing it in a clean unused tea towel. See Notes.
- Stir in the onion, carrot, and corn.
- Mix well to ensure that mixture is evenly coated with the spices and all the moisture has evaporated.
- Add the mixed colour peppers and the mayonnaise and mix through thoroughly for about 5 mins.
- Remove from heat and allow the mixture to cool ,then add the chopped coriander.
- Let the mixture cool completely before assembling the spring rolls.
- Mix the flour and water together and stir vigorously to form a paste.
- To assemble the spring rolls take one sheet and form a diamond shape and brush with the flour paste on three sides.
- Place a tablespoon of the filling mixture near the bottom of the wrapper on the end closest to you.
- Fold the bottom corner over the filling and then fold in the sides of the wrapper and roll up again to enclose the filling and form elongated fingerlike shapes.
- Ensure that the ends are firmly tucked in.
- Secure the end of the wrapper with a bit of flour paste and seal.
- Preheat the air fryer on 200°C for 5 minutes.
- Place fresh or frozen spring rolls in a single layer in your air fryer. For golden brown deliciousness, brush each lightly with oil.
- Air fry at 190°C for 8-10 minutes or until golden brown.
- Drain on absorbent paper and serve with your favourite dipping sauce.
Notes
Tip: Use a clean unused kitchen towel for squeezing the liquid from the onions. Soak the cloth in soapy water immediately after use to remove the onion odour. Dry and store it in a zip lock bag for future use.
