Banana Muffins
All you need to make these moist Banana Muffins are overripe bananas, a few basic pantry ingredients and about 30 minutes of your time. These deliciously soft and buttery banana muffins are spiced with cinnamon and mixed spiced and loaded with bananas. Perfect for lunchboxes or a weekend treat.Ingredients Needed to Make Banana Muffins Flour – Plain Flour and Nutty Wheat FlourCoconut – Plain Desiccated Sugar – Brown SugarBananas – Over-ripened. ( See Notes)Butter – I usually always use unsalted butter Eggs – I used large eggs.Milk – I used Buttermilk which makes delicious moist muffins.Raising Agent – Baking powder and Bicarbonate of Soda.Spices – Ground Cinnamon, Ground Mixed Spice Salt – Salt is necessary to bring out all the flavors.Garnish – Flaked Almonds and Banana Slices
Ingredients
- 1 Cup Cake Flour
- 1/2 Cup Nutty Wheat Flour
- 1/2 Cup Desiccated Coconut
- 1 Tsp Baking Powder
- 1 Tsp Baking Soda
- 1 Tsp Ground Cinnamon
- 1/2 Tsp Ground Mixed Spice
- 1/4 Tsp Salt
- 3/4 Cup Brown Sugar
- 2 Large Eggs
- 1/3 Cup Melted Butter
- 1 Cup Over Ripe Bananas Mashed
- 1/3 Cup Buttermilk
Garnish
- Flaked Almonds
- Banana Slices
Instructions
- Pre-heat the oven to 180ºc and line 2 x 12-hole muffin trays with muffin/cupcake liners.
- In a medium bowl mix flours, desiccated coconut, baking powder, baking soda, ground cinnamon, ground mixed spice and salt and set aside.
- In a separate bowl mix brown sugar, eggs, melted butter, and mix well combined.
- Add mashed banana and buttermilk and mix well.
- Fold in flour mixture gradually into the wet ingredients and until well combined.
- Fill the muffin tins two-thirds of the way full. This recipe makes approx. 15 large muffins.
- Top with garnishing.
- Bake in a preheated 180°C oven for 20-25 minutes.
Notes
Every time I have a few bananas that are overripe I pop the whole bananas with the peel on, into a large freezer bag. After thawing and peeling the frozen banana, it will come out of the peel in an essentially mashed texture and are perfect to make muffins or our delicious Banana Bread. The bananas can be frozen for up to 3–6 months
